We live near Seattle, and my brother-in-law arrived from the Philippines. I wanted to give him some of the best food we have, so I got some smoked Copper River salmon from the best hole-in-the-wall place I know, at $26/lb.
He was grateful and said it was good, but I could tell he wasn't real happy with it. I asked my wife, and she said that to him, it was just "tinapa" - "tin-ah-pah".
It turns out that in the Philippines, smoked fish is not a delicacy like it is here, but is mainly for poor people who can't afford refrigeration. Given a choice, they like their fish freshly cooked in any number of ways...just not smoked.
